Microbiology & Technology of Marine Products
In our quest to use research and innovation to benefit society, at the Institute we work to ensure food safety and quality in production systems.
This is the aim of the Microbiology & Technology of Marine Products group, also known as 'MicroTEC'. The group works to improve the quality and safety of fish and seafood products following the Farm to Fork strategy, ensuring sustainability whilst mitigating the impacts of climate change and other driving factors such as population migration and overgrowth.
Their food safety research is currently focused on the sociobiology of Listeria monocytogenes-harboring biofilms and deals with aspects related to the genetics, microscopy and ecology of these communities. Additionally, the group studies the interactions within these mixed communities, both intra- and interspecies, to contribute to the design of effective, target-specific and environmentally friendly protocols for antibiofilm sanitation.
MicroTEC also coordinates RISEGAL, the Galician Emerging Food Safety Risks Network, participating in the identification and characterization of emerging hazards in the food production chain. The network intends to anticipate food safety issues linked to climate change and build new resilient food production systems.
Lastly, within the scope of the Industry 4.0 framework, our current research on food quality aims to investigate non-invasive technologies, such as hyperspectral analysis, to assess the sensory properties and quality of fish and seafood products in an attempt to configure an intelligent and autonomous agri-food system.

- Capabilities | Assessment of nutritional value in seafood and design of personalized nutrition treatments and products
Design and development of seafood products for target consumers (elderly, young, diabetic, allergic to seafood, etc.) that guarantee specific nutritional requirements, safety and sustainability. Development of techniques (i.e. metabolomics, proteomics, genomics, lipidomics, etc.), using animal models and cell cultures, to characterize the response of a patient/consumer to diet and to design personalized nutrition treatments and products (i.e. nutraceutics, hypoallergenic fish products, immunostimulants, functional foods, etc).

Development of processes for the transformation of discards and seafood by-products into new raw materials (fish mince, fish oil, etc.) with added value for the generation of innovative processed food products (hamburgers, nuggets, etc.), ensuring traceability, nutritional value and safety in new value chains.

Modelaxe a múltiples escalas para flexibilizar a toma de decisións e optimizar procesos complexos (p. ex., esterilización) baseado no control da seguridade e calidade dos produtos alimentarios mediante técnicas non invasoras (sensores de software, etc.).
- Capacidades | Evaluación del valor nutricional de los productos del mar y diseño de tratamientos y productos para nutrición personalizada
Diseño y desarrollo de productos del mar para personas consumidoras objetivo (tercera edad, jóvenes, pacientes con diabetes o alergias al marisco, etc.) que cumplan unos requisitos específicos tanto nutricionales como de seguridad y sostenibilidad. Desarrollo de técnicas (metabolómicas, proteómicas, genómicas, lipidómicas, etc.) mediante el uso de modelos animales y cultivos celulares para caracterizar la respuesta a una dieta de pacientes o personas consumidoras y diseñar tratamientos y productos para una nutrición personalizada (p. ej., nutracéuticos, productos del mar hipoalergénicos, inmunoestimulantes, alimentos funcionales, etc.).

Desarrollo de procesos para la transformación de descartes y subproductos del mar en nuevas materias primas (pasta de pescado, aceite de pescado, etc.) con valor añadido para la generación de innovadores productos alimentarios procesados (hamburguesas, nuggets, etc.), garantizando su trazabilidad, su valor nutricional y su seguridad a lo largo de nuevas cadenas de valor.

The invention relates to a method of preserving live shellfish using a modified atmosphere that is rich in oxygen and contains a second main nitrogen component, so as to preserve live bivalve shellfish and safeguard their quality for as long as possible throughout the whole marketing and sale process. The commercial shellfish packaging must be full and well compacted, for which purpose units must be perfectly inserted during the filling operation using a vibrator so that bivalve shellfish cannot open their valves, thus losing intervalvar liquid, throughout the marketing process. The invention relates to the most popular bivalve on the market in terms of sales and price and, as a result, is of particular interest to the mussel industry. Technique for the preparation of hyaluronic acid (AH) based on fish vitreous humor for its use in cosmetics and clinical work. The process comprises protein electrodeposition and simultaneous diafiltration with total recirculation. This procedure allows for selective recovery of impure sediments, precipitation of AH and solubilization of proteins, yielding AH with purity over 99.5%. More detailed information can be found here.
